If you’re new to pairing teas, we’re here to help you out. Tea, just like wine, can serve as the perfect match for many foods. Ceylon OP and Spring Harvest are two of our best-selling teas that are wonderful complements to a variety of foods.

Our crisp black tea, Ceylon OP, can make lovely pairings with a diverse range of foods. Ceylon OP couples well with many kinds of meat, such as baked ham, barbeque meat, buffalo wings, and lemon chicken. This tea is also a great match for seafood. For a light and delicious snack, try pairing Ceylon OP with Edam or provolone cheese. Ceylon OP is also a wonderful complement to heavy dessert foods, such as cake or pie!

Our passionfruit-flavored green tea, Spring Harvest, is another pair-friendly tea. This floral and fruity tea makes an excellent pair with chicken, pasta, and curry dishes. Spring Harvest also couples well with dessert food. Try pairing this tea with some pumpkin pie or sweet cookies this fall season.

Organic Teas for Autumn

Autumn is approaching! Beat the cold by warming up with organic tea. Not only are organic teas tasty, but they also have a multitude of health benefits. Yerba Mate and Bourbon Vanilla are two of our favorite organic teas–here’s why:

Our Yerba Mate tea is a traditional South American tea that is packed with health benefits–it contains 24 different minerals and vitamins, 15 amino acids, and a profusion of antioxidants. In addition, studies suggest that Yerba Mate tea aids in lowering cholesterol. Yerba Mate has a pure herbal and vegetal taste. Try pairing this earthy tea with some crisp apples or pears.

Bourbon Vanilla is a sweet and full-bodied flavored black tea that is also rife with health benefits. Medical studies have shown that black tea might inhibit cancer growth, helps save arteries, and fights viruses. Black tea is also rich with antioxidants and Vitamin B1. We added pieces of bourbon vanilla from Madagascar to give this black tea a savory boost. This tea is a wonderful pair with dessert.

Our Two Favorite Labor Day Iced Teas!

Wind down on Labor Day and share a glass of iced tea with friends before the start of Autumn. Our two favorite iced tea choices for this Labor Day are Tangerine Dream and Pineapple Rooibos. Here’s why:

1. Tangerine Dream: This loose leaf green tea blend packed with safflowers and a citrus flavor is the perfect companion to BBQ and picnic foods. The citrus flavor gives it a clean and refreshing flavor that will not only cool you down, but calm you down. Try adding juicy orange slices for an extra burst of tang!

2. Pineapple Rooibos: Your body deserves a healthy treat after a long, sweltering summer, and this blend is the perfect way to detox. What better way to spend a summer day than to read a book and to sip some cold brewed tea? Today, our book of choice is Lewis Carroll’s Alice’s Adventures in Wonderland and you can only guess what scene attracted our attention. The Mad Hatter’s tea party made us speculate as to what was served during such an occasion.

Tea Pairing with Vosges Haut-Chocolat

So  you’ve heard of pairing chocolate with wine, but what about complementing that rich truffle with a cup of loose leaf? We were so excited about this idea that we paired up with Vosges Haut Chocolat last night for a special Chocolate & Tea pairing event at our tea shop in Soho!

Vosges Chocolat specializes in creating luxury chocolates rooted in a sensory journey of bringing an “awareness to indigenous cultures through the exploration of spices, herbs, roots, flowers, fruits, nuts, chocolate and the obscure.”   Many of their treats bring together seemingly odd combinations (such as bacon and chocolate, or curry and chocolate) as a way to  just “come one step closer to bringing peace to the world through chocolate.”

Everyone here at Sanctuary T agrees that this sensory experience of chocolate also translates to tea–that feeling of retreat you get from sipping your favorite cup. So at the event we paired up 10 specialty Voseges chocolate bars with 10 of our favorite BYOT loose leaf tea flavors.

Our New Favorite Duo: Beer & Tea

Sanctuary T Shop Loose Leaf Teas - Beer and Tea Recipe

With spring in full swing, it’s time to jazz up your happy hour beer time with a splash of loose leaf tea. We know it sounds like a strange pairing; but if you enjoy a nice, cold, golden beer and you also love loose leaf tea then try adding the two together.

Our favorite recipe is to add our loose leaf Watermelon blend to a glass of beer (a light summer beer like corona pairs well). All you have to do is pour 1 tablespoon of our Watermelon fruit blend to your beer and let it sit for about 4 minutes while stirring occasionally.

After 4 minutes you can either scoop out the fruit bits or simply enjoy them with the beer. We like the added goodness of the dried fruit in the beer, so we keep the bits in  while enjoying our glass.

We love this recipe because it’s a perfect way to make a simple beer a bit more summery and special. Also, if you enjoy a little fruit flavor but don’t want anything that ruins the integrity of your beer, then this recipe is for you! You can even slice up a lime to garnish. :)

Mash Potato’s New Best Friend: Gunpowder Green Tea

There’s no question that Thanksgiving mashed potatoes are delicious when smothered in gravy, sour-cream, cheese or butter! But all those rich toppings along with the starchiness of the potatoes can be quite a lot to digest, especially if you’re hoping to squeeze in dessert.

So for our third Thanksgiving Foods & Tea Pairing blog post we’ve decided to find mash potatoes a new tea friend: Gunpower Green Tea. Gunpowder Green tea is the perfect pair for mash potatoes because it has a strong and earthy taste to it that stands up to even the strength of garlic.

Sipping on a cup of Gunpowder green tea won’t take away all those calories from the mashed potatoes, but it’ll definitely clean out your mouth while aiding in digestion. If anything the Gunpowder tea will make each bite of mashed goodness that much more delicious!

Cheers to A Spirited Thanksgiving with an Earl Grey Martini

Last week we kicked off our Thanksgiving Dishes & Tea Pairing series with Apple Pie and a strong brew of loose leaf Assam. For the second pairing, we’re featuring something a little less conventional, but still a perfect tea pairing for Thanksgiving: Gin and Earl Grey.

Curious? Well, read on!

Out of the various alcohols that are consumed during the Thanksgiving holiday season, Gin is one of the best spirits to “pair” (or rather infuse) with tea. Since Gin is predominantly made with  juniper berries and often has scents of citrus botanicals such as lemon and bitter orange,  it infuses wonderfully with the bergamot flavor and bold black tea leaves in Earl Grey.

So next time you say cheers over a turkey dinner, try raising up an Earl Grey Martini to jazz up your holiday toast. Check out the recipe below for instructions on how to infuse and shake up your Earl Grey Martini.

Just remember when infusing any alcohol with tea that you must use good loose leaf tea for the flavor of the tea to translate into the spirit; and plan on infusing your alcohol 2 hours before you make the cocktails.

Ingredients for Infusion:

  • 1.5 Table Spoons of high quality loose leaf Earl Grey
  • 16 oz of Gin

Directions for Infusion:

  1. When making cocktails for the holidays it is nice to have a larger amount of alcohol pre-infused so you can make multiple cocktails at once. So we’ve decide to infuse 16 oz of Gin, but feel free to double the amount if needed.
  2. Simply pour the gin into a large empty bottle or pitcher.
  3. Add in the Earl Grey
  4. Stir or shake every 15 minutes or until the tea leaves settle again.
  5. The agitation will allow the gin to strip off the flavor from the tea and go into the alcohol.
  6. Continue for about 2 hours and up to 4 for a strong flavor. Never infuse overnight–the alcohol will get bitter, just like oversteeped tea.

Ingredients for Earl Grey Martini (1 cocktail)

  • 2 oz of Earl Grey Gin
  • 1 oz simple syrup
  • 1/2 oz of lemon juice
  • 1 egg white (yup, good old egg whites for froth!)
  • Sugar
  • VIGOR

Directions:

  1. Separate egg white from yolk.
  2. Pour Earl Grey gin, simple syrup, lemon juice and egg white into shaker.
  3. Add ice to shaker and shake with vigor.
  4. Shake until there is a froth.
  5. Rim your glass with sugar.
  6. Strain into rimmed glass.
  7. Garnish with lemon.

Thanksgiving Dishes Paired With Tea: Apple Pie & Assam

Even though it’s only the second week of November, it’s hard to stop thinking about/planning the big November 25th Thanksgiving feast. So in celebration of the gobble gobble day, we’ve decided to create a mini-blogging series about pairing your favorite Thanksgiving foods with tea.

Pairing tea with food, like pairing wine with food, can bring out the subtle flavors of tea as well as the food. And on a holiday like Thanksgiving, where celebration happens through food (and of course family and friends), it can’t hurt to drink a little tea to aid with the digestion.

With 16 days til November 25th, we are starting our Thanksgiving Dishes & Tea Pairing series with a quintessential Thanksgiving dessert–apple pie! (Who says we can’t start with dessert?!)

Since apple pie is filled with that gooey, fruity, and cinnamony  filling we recommend pairing this dessert with a bold cup of Assam Loose Leaf tea.  The bold flavor of the Assam leaf will allow for you to enjoy the sugary goodness of the apple pie while also balancing out the buttery goodness of the flaky pie crust. Our Autumn Melody–which is an Assam blend with cardamom, ginger, cloves, and nutmeg –is a particularly good pairing choice with apple pie because the spices in the blend accentuate the  cinnamon filling of the pie!

And if you’re more of a pumpkin pie fan, you’re in luck because Assam and Autumn Melody also work great with pumpkin pie! So when you serve up a slice of apple pie this Thanksgiving, consider brewing a cup of Assam to pair.
