The Allergy Fighting Tea Brew!

Spring time roses and green summer trees are nice; but if you have allergies, everything in bloom can mean endless sneezing and sinus issues–yuck! So we’ve come up with our very own tea concoction that helps soothe those vicious allergy symptoms and let’s you find some peace amid the pollen.

You just need 3 main ingredients: fresh ginger, lemon, and loose leaf Rooibos tea. Rooibos tea is the perfect loose leaf brew to drink when combating a sinus infection, allergies or the common cold. Why? First of all, there is no caffeine so you don’t need to worry about dehydrating yourself. Second, it’s packed with antioxidants and minerals! We particularly love putting in our Pineapple Rooibos into this mix–it gives it an extra kick of fruity that we love.

Just follow these simple instructions:

  1. Slice a small lemon in half and squeeze half of it into a cup
  2. Take the other half and cut them horizontally to make round lemon slices
  3. Peel and slice ginger into thin slivers
  4. Add ginger and lemon into your cup
  5. Pour in hot water
  6. Steep in loose leaf rooibos for 5 minutes
  7. Add honey or sugar to taste (if you like).
  8. Enjoy!

Our New Favorite Duo: Beer & Tea

With spring in full swing, it’s time to jazz up your happy hour beer time with a splash of loose leaf tea. We know it sounds like a strange pairing; but if you enjoy a nice, cold, golden beer and you also love loose leaf tea then try adding the two together.

Our favorite recipe is to add our loose leaf Watermelon blend to a glass of beer (a light summer beer like corona pairs well). All you have to do is pour 1 tablespoon of our Watermelon fruit blend to your beer and let it sit for about 4 minutes while stirring occasionally.

After 4 minutes you can either scoop out the fruit bits or simply enjoy them with the beer. We like the added goodness of the dried fruit in the beer, so we keep the bits in  while enjoying our glass.

We love this recipe because it’s a perfect way to make a simple beer a bit more summery and special. Also, if you enjoy a little fruit flavor but don’t want anything that ruins the integrity of your beer, then this recipe is for you! You can even slice up a lime to garnish. :)

Green Tea Cayenne Chicken, Fresh Mango Bean Salad & Red Quinoa

Quick and easy, yet delicious and healthy recipes are hard to come by (especially if you want to make something special). So we’re whipping out our secret tea ingredient–our Tahitian Green Tea T-Dust Seasoning–to make a normal chicken dish a little more flavorful and to spike it with the antioxidant goodness of green tea leaves.

Tahitian Green Tea T-Dust  is our unique seasoning inspired by the coastal beauty of the South Pacific. Taste the freshness of green tea tempered by hints of ginger and coconut, leading up to a satisfyingly spicy finish.

If you love fresh, flavorful, and slightly sweet dishes then this one’s for you!

So without further ado, here’s our favorite quick tea-inspired Chicken dish paired with a Fresh Mango Bean Salad and a side of red quinoa!

Ingredients (serving for 4):

For Green Tea Cayenne Chicken:

  • 4 Skinned Chicken breast
  • Sea Salt
  • Cayenne Pepper
  • Honey
  • 1 Lime
  • 1 Red Onion
  • Olive oil
  • 4 garlic cloves

For Fresh Mango Bean Salad

  • 1/2 Lime
  • 1 Mango
  • 3 On-the-Vine Tomatoes
  • 1 can of black beans
  • 1 Ripe Avocado
  • Cilantro

For Quinoa:

  • Chicken stock
  • Red Quina

Directions:

For Green Tea Cayenne Chicken:

  1. Slice chicken breasts into large strips place in a large bowl
  2. Add 2 teaspoons of Cayenne pepper, 2 teaspoons of salt, and 1 tablespoon of honey
  3. Squeeze in lime juice
  4. Dice red onions and stir them into the bowl
  5. Chop onions and stir them in as well
  6. Stir everything and allow chicken to sit for 10 minutes
  7. Pan fry on heated skillet with olive oil

For Fresh Mango Bean Salad:

  1. Dice all of the fresh ingredients and mix in large bowl together.
  2. Squeeze on 1/2 of lime juice and 1 tsp of salt
  3. Add drained black beans
  4. Chop cilantro

For Red Quinoa:

  1. Rinse and soak 2 cups of quinoa in cold water.
  2. Drain and pour into rice cooker.
  3. Add 4 cups of chicken broth instead of water

Chili Rooibos Hot Cocoa!

Mondays blues are hard enough to get rid of, but then add some dreary weather and it seems like Monday will never end. So rather than sulking away, we’ve decided to cozy up with a warm, sweet, rich cup of spicy Chili Rooibos Hot Cocoa.

Sounds strange? Well pairing chili with chocolate is no novel concept. In fact the chili pepper was an essential ingredient used by the Mayans–the first people to have discovered the secret of cacao during the Classic Period Maya–to remove the bitterness from the cacao and accent its sweetness. It was only until the cacao bean was imported to England that milk, vanilla, and sugar were added instead of chili pepper.

So it’s no surprise that the chili & chocolate combo is making a come back, and that we are adding some of our Chili Rooibos T-Dust to our hot cocoa. Now, it doesn’t sound like anything fancy but adding a few shakes of our T-Dust to our cup of hot chocolate makes the world of a difference: the chocolate tastes sweeter, the cup warms us up with a hot spice, and we get all the antioxidants from the Rooibos!

Next time you’re feeling down or need to spice up a chocolatey dish (brownies, cupcakes, cookies, etc.) try adding a few shakes of our Chili Rooibos T-Dust on top! If you need an extra kick you can also add some Cayenne pepper to push the heat up. However if you really can’t eat spicy foods (we know it’s not for everyone), but you still would love a nice twist on  your traditional cup of hot chocolate try out our Peppermint Hot Chocolate recipe.

Green Tea Pancakes with Strawberry Compote!

It’s pouring snow here in New York (where our tea restaurant is located!) and we can’t help but feel a little worn down from the 30 degree weather.

So instead of sulking we’ve decided to put a spin on our breakfast/brunch pancake with our favorite secret ingredient of all time: tea! Yes sir, we’ve added a dash of our Matcha Green Tea Powder to our pancake batter, and have turned the golden cakes green with matcha goodness. Adding some tea to your pancake is simple, adds a different flavor to your pancake, and will make you smile.

If you don’t have Matcha Green Tea Powder, then you can either try grinding up five tablespoons of loose leaf Gyokuro or Genmaicha Matcha in a mill grinder or a very clean coffee grinder–just be careful you want coffee and green tea pancakes. Even though the grinding sounds like a hassle, it’s actually simple and a great way to add a little loose leaf kick to your food! (We’ve also tried Rooibos Pancakes by grinding our favorite Tiramisu Rooibos!)

But if you really don’t feel like grinding your loose leaf tea, we have one more option which is one of the most versatile way to cook with tea (besides our T-Dust of course): make tea butter! To find out more about this by checking out our past blog post.

Now back to those Green Tea Pancakes that even Dr. Seuss would be proud of!

Ingredients (Serving 3 Medium Pancakes):

  • 3  Tablespoons of Matcha Powder
  • Pancake Mix
  • 1/2 cup of frozen strawberries
  • Maple Syrup

Directions:

  1. Add Matcha Powder to 1/2 cup of pancake mix
  2. Follow directions for water ratio on the pancake mix
  3. Stir in a bowl
  4. In a separate small pan add frozen strawberries and desired maple syrup. Allow to thaw and simmer till a red syrup is created.
  5. Meanwhile, on a separate pan pour batter, cook, and flip.
  6. Once the compote is fully simmered (with soft berries and red syrup), serve compote on or on the side of your Green Tea Pancakes!

Jasmine Tea Rice

There is no carb staple like rice! So it’s no surprise that half of the population of the world consumes it almost everyday.

Sure a classic steaming bowl of rice is comforting, but it’s nice to jazz up your rice dish with a different flavor that is not stir fry. So what we like to do is add a little of our Jasmine Silver Needle loose leaf!

You might be wondering how this is any different from purchasing “jasmine rice.”  The answer: Despite it’s name jasmine rice as we know it gets its aroma from a southeastern tropical plant called pandan and not jasmine!

When you add loose leaf jasmine to your rice you will see how delectable the flavors of pandan and jasmine are! So put Jasmine tea into your Jasmine rice, and you will realize how delicious it is.

Ingredients (Serves 4):

  • One spoonful of loose leaf Jasmine tea (about one tablespoon)
  • Pinch of sea salt
  • 1 1/2 cups of Jasmine rice

Directions:

  1. Bring about 2-2 1/4 cups of water to a boil
  2. Add in loose leaf Jasmine tea and allow to steep for 5 minutes with lid covered
  3. Strain out tea leaves
  4. Add a pinch of salt to the strained Jasmine tea
  5. Bring the tea again to a boil and add rice.
  6. Reduce heat to low.
  7. Cook for about 15 minutes so that the rice is fluffy and the jasmine has soaked in.
  8. Stir gently and serve immediately!

A Tasty Pu-erh Detox Recipe

If your New Year’s resolution is to get healthy, to lose weight, or simply to be happier with yourself, then try sipping on our pu-erh detox tea. The recipe includes all natural ingredients, is packed with antioxidants and minerals, and has little to no calories. And did we mention, it tastes great!

So drink to a better you.

Ingredients:

  • Pu-erh tea–A uniquely processed black tea that is known to aid in weight loss, boost metabolism, and sooth digestive problems; and has a characteristic earthy taste and red color that is delicious. Never heard of it? Try it out and you will fall in love!
  • Orange Juice
  • Cinnamon stick

Directions:

  1. Brew 3/4 cup of pu-erh tea.
  2. After the tea has steeped for about 3-5 minutes, add 1/4 cup of orange juice to the cup
  3. Sprinkle on cinnamon or simply stir with a cinnamon stick.

Tea Spiced Wine!

Jazz up your holiday festivities with a cup of tea spiced wine–our tea-inspired take on mulled wine.

Whether you are hosting a holiday party or you want to make a wintertime occasion extra cozy, this tea-inspired recipe will make even the most wallet-friendly bottle of wine taste decadent and aromatic.

It’s the perfect dessert (or replacement to your glass of Port); and the loose leaf teas add a special depth to the overtones of the wine that will warm you up from the inside out. We especially love using our Masala Chai, Pear Cobbler, and Cinnamon Apple with a bottle of red. Try it out. It’s quick, easy and absolutely delicious!

Ingredients (for one glass):

  • 1 cup of red wine
  • 4 tablespoons of loose leaf tea (try our suggestions above! or any loose leaf tea with strong cinnamon/spices)
  • sugar

Directions:

  1. Pour wine and loose leaf tea into a small pan
  2. Bring to a simmer (do not let boil)
  3. Add sugar to taste (we like to add 2 tablespoons per serving)
  4. Strain tea leaves
  5. Serve & Enjoy!

The Cold Stopper!

Don’t let your sniffles turn into a monstrous cold! If you feel like you might be coming down with something then try this cold stopping tea concoction.  It’s simple, natural, and will clear your sinus while fortifying your immune system with vitamin C. And even better, it tastes delicious.

So don’t drown yourself in fake vitamin C mixes and try stopping your cold with a nice brew of tea.

Directions:

  1. Simply brew a cup of ginger tea.
  2. Add a few slices of lemon into tea (make sure to squeeze the lemon). You can also choose to use an orange/orange juice if you like.
  3. Sprinkle some cinnamon and cayenne pepper! (The cinnamon and cayenne help boost your metabolism; so you can keep on going despite the impending cold grogginess)
  4. Add as much maple syrup or honey as you please!
  5. Enjoy with leisure while the tea helps kick that cold!
