This high grade, competition "Monkey Picked" oolong blend (a.k.a. Tiekwanyin) is known for removing free radicals, improving skin, and even promoting weight loss. With herbal tasting notes of nut and wood, the Iron Goddess is an ideal pairing with fried foods or dishes with basil and garlic.
There are several ways to steep oolong tea. One traditionally Chinese way is to pour two ounces of not-quite-boiling water over 1 tbsp of tea and let steep for approximately one minute. Repeat this process up to 10 or 15 times, or until the leaves lose their flavor. Devotees of this style say each steeping is dramatically different, and the 3rd or 4th may be the best.
At Sanctuary T, we enjoy placing 1 tbsp of tea leaves directly in a cup (without a filter or strainer) and pour in hot water. Sip on it continuously throughout the day and refill as necessary. The leaves never get bitter and the fragrance, warmth and familiarity of a day long cup is decidely relaxing.
